I want to start by saying, I absolutely LOVE this recipe. Chia pudding is my current obsession. Yes, I know it is a little embarrassing how long it took me to try this but I literally cannot stop eating it. I have always loved chia seed in smoothies or even just in water but I never actually considered chia pudding as something I would like. Facepalm… I know.
This recipe is a little bit on the lighter side in regards to flavor and can easily be swapped for other fruits (blueberries, bananas, apples, etc) if you choose to, but when I found pre-seeded pomegranate seeds at my grocery store I knew I had to have them. As much as I love staining my hands and counter by removing pomegranate seeds, it was so nice to be able to drop these little seeds into the bowl without making a mess in the morning when I am already pretty busy. I make enough of a mess when I try to eat smoothies in the morning, and I’ve learned that chia pudding is great breakfast for a busy morning since I can make it the night before and it requires very little clean up.
- ¼ cup of chia seeds
- 1 cup of coconut milk
- ½ tsp of agave syrup or sweetener of your choice
- Vegan dark chocolate
- Pomegranate seeds
- Mix chia seeds, coconut milk, and sweetener in a bowl or sealed container.
- Place in fridge overnight.
- Add chocolate and pomegranate to your liking before eating!
