Does anyone else not like roasted red peppers out of the jar but love them cooked or in anything else? I love roasted red pepper hummus, soup or cooked on pizza, but for some reason I just can’t eat them straight out of a jar. The sliminess freaks me out… I am sure I am really getting your appetite going now.
When I first became a vegetarian several years ago, my only real strategy was to not eat meat. I did a research project on current farming practices and could not look at meat the same way. The problem with this view was that I ended up eating pasta every. single. day. If you have read my about me, you will know this was not a particularly healthy or successful way of eating. I am still obsessed with pasta but I try my best to find alternatives like spaghetti squash or zucchini noodles to add more veggies to my diet. Recently I was introduced to black bean pasta by a friend and it is currently my new favorite alternative!
Since adopting a primarily plant-based diet I have been eating a lot of salad (shocking, I know). Actually, that is an understatement. I eat salad all the damn time. That being said, I honestly never find it boring. As you begin to eat more plants and your taste buds change, trying different combinations of veggies actually becomes exciting! If you have been on a plant-based diet for a while, you know exactly what I’m talking about.
