Sorry I missed my Monday post, life has been a little crazy this week because Austin and I got married! What a time to be alive! I am so beyond grateful to have someone so amazing to work on this blog with. We both are so passionate about living a healthier and more sustainable life, even if we mess up and have way too much pizza (which might have happened this weekend) or gelato (still celebrating!) from time to time. We have forgiven ourselves and are getting back on track to reaching our goals. This has been such an important and influential part of our relationship.
Ok I totally understand if you stop following me from the title of this blog post. I am finding it hard to forgive myself for this one as well (And I know, there are more than 5 veggies in this salad, I just couldn’t resist). I promise the salad makes up for it. It is so fresh and easy to make. Perfect for the upcoming BBQ’s (and for when you’re recovering from Cinco de Mayo festivities). This recipe is so versatile it could even be put into a taco!
I don’t know if I’ve said this enough yet, but I am way too excited for summer. Anyone else have seasonal depression? This nice weather has me feeling all of the feels! For me, warmer weather means more time outdoors, more adventures, more hikes, and what’s better on a hike than granola?
We first had these clusters on a long car ride with my friends (on the way to my surprise bachelorette party, which is a story for another day ;)). I had to hide them because I simply could not stop eating them.
Next to Tiramisu, my favorite dessert is definitely Apple Pie. Not only do i love the taste of apples and cinnamon but the smell is amazing. While it has not been easy to find a healthy pancake recipe, I think this one comes pretty close!
I am going to be honest, I am not a huge fan of strawberries (gasp!), but I know how much my fiance Austin (and everyone else, it seems) loves them, and I also know how much he loves cheesecake, so I knew I needed to give strawberry cheesecakes a try. And I am sooo glad I did. These cheesecake bites are the perfect balance of easy to make and really damn delicious.

She is such an inspiration for not just moms, but any recipe makers looking to be creative within certain requirements (like plant-based whole foods).
Does anyone else not like roasted red peppers out of the jar but love them cooked or in anything else? I love roasted red pepper hummus, soup or cooked on pizza, but for some reason I just can’t eat them straight out of a jar. The sliminess freaks me out… I am sure I am really getting your appetite going now.
I am getting married in May and I am beyond excited. So, naturally I hired a personal trainer for the first time in my life. To be fair I also joined a new gym so there was a heavy discount, but anyway, she is amazing! I asked for someone to kick my ass and she never fails.
I have been obsessed with tiramisu ever since I can remember. I love the rich coffee flavors mixed with chocolate and fluffy lady fingers. In fact, I am getting hungry just writing this…. Every time i went out to an Italian restaurant or pizza place i would always ask for Tiramisu. I may or may not have even ordered it a few times on Grubhub.
Anyway, this Tiramisu recipe just felt natural for me to make. It offers sweetness from the agave syrup, creaminess from the cashews, and I added in a secret ingredient for a fun twist. Does anyone else love seeing the look on people’s face when you have them try something and tell them it is vegan and they can’t believe it? This is one of those recipes that both my vegan and non-vegan friends could not get enough of.
Does anyone else feel like once in awhile it’s nice to have a break from smoothies? Personally, breakfast food is my favorite. My whole life I loved having eggs for breakfast. Whether they were scrambled, boiled, or fried, eggs were my go-to for almost any meal. However, in choosing to live a plant based life I knew decreasing my egg and meat intake would be a serious challenge. If you feel similarly, you need to try this tofu scramble.
